What is cloud bread?

Cloud bread only requires three ingredients: eggs, sugar and cornstarch . Initially, it was called 'oopsi bread', a nickname that suggests that an ingredient has been forgotten: flour! But this omission makes it possible to obtain gluten-free and carbohydrate-free bread, a very pleasant result for those who follow special diets. We grant you, the light and soft texture is closer to a meringue than a bun, but it's just as good! For a hypnotizing visual rendering, you just have to add a little food coloring, it's up to you to choose which color(s) to use.

The cloud bread recipe

For this recipe, you will need a whisk (manual or electric), an oven and baking paper.

The ingredients needed:

  • 3 eggs
  • 2 ½ spoons of cornstarch
  • 2 teaspoons of white sugar
  • The dye(s) of your choice (optional)

You can also add vanilla, chocolate chips, food sprinkles...



The steps to follow:

  1. Preheat the oven to 150°C.
  2. Separate the egg whites from the egg yolks. Whisk egg whites until frothy.
  3. Add sugar and cornstarch. Whip the whites until you get a firmer texture.
  4. Place the ball of dough on a baking sheet lined with parchment paper. Flatten it with the back of a tablespoon or spatula.
  5. Bake for 20-25 minutes. The cloud bread should be lightly golden on the surface when it comes out.
