Who hasn't eaten a club sandwich? Composed of slices of soft bread topped with lettuce, bacon, chicken or turkey and mayonnaise, this sandwich would have been born in a new york casino in 1894 to supply blackjack players. The club sandwich has now conquered the cafes and trendy bars of France, where its price sometimes borders on insolence … So, how about making one at home?

The ingredients of Julien Duboué's club sandwich

With just a few ingredients, Julien Duboue takes the club sandwich from good to very (very) good.

For the club sandwich:

  • 2 chicken thighs
  • 5-6 slices of bacon
  • Parmesan
  • 3 sections of pain de mie
  • 1 Hard egg
  • Sriracha sauce

For the mayonnaise:

  • 1 egg yolk
  • 10 cl of neutral oil
  • 1 case of mustard
  • 1 dash of Xipister Vinegar
  • 1 sucrine
  • A few inflorescences of chou romanesco
  • 1 cébette

The steps to make Julien Duboué's club sandwich

What makes all the difference in Julien Duboué's club sandwich is the chicken. He grills thigh highs with the skin on to get super crispy chicken .



  1. In a pan, grill the chicken skin side down basting regularly with the melted fat. Flip the chicken over to brown both sides nicely. Cut regular slices into it.
  2. Prepare a Homemade mayonnaise mixing the egg yolk, mustard, salt, pepper. Whisk while pouring the oil gradually to whip up the mayonnaise. Finish with the drizzle of vinegar. Add the chopped Romanesco cabbage, the chopped spring onions and the lettuce.
  3. Grill your slices of bacon in a frying pan, meanwhile, cut the hard-boiled egg into strips and toast the slices of bread .
  4. Assemblage : spread a little mayonnaise on a slice of bread, a few slices of hard-boiled egg and the slices of grilled bacon. Continue with another slice of bread , more mayonnaise, grilled chicken slices, a little grated parmesan, a drizzle of sriracha sauce and close with the last slice of bread.

Cut out the sandwich diagonally to form the famous triangles and devour without waiting.
