1 puff pastry 22m in diameter
20 g of beurre
400g mushrooms from Paris
500g pink and small button mushrooms

To prepare the mushroom pie, start by preheating your oven to 200°C .
Peel and chop the onion. Wash and cut the mushrooms into fine brunoise. Heat a little oil and the butter in a frying pan, add the onion and sweat it. Then add the mushrooms and a pinch of salt. Cover and simmer until all the vegetable water has evaporated and the mushroom duxelles be well melted. Set aside.
Wash and cut the other mushrooms into thin strips. Fry them in a very hot pan with a drizzle of olive oil. Be careful, do not overlap the strips during cooking, so that they cook well and do not stick together. Drain them on a plate. Book.
