This Chicory salad will be perfect as a starter. Here are the steps to follow:

  1. Chop the endives.
  2. Prepare a vinaigrette with old-fashioned mustard, a drizzle of olive oil, and a little vinegar. Coat the endives with this sauce.
  3. Add Roquefort crumbs and walnut kernels.

You can also add a little lemon and honey if you like.
