Boil the potatoes with the skin on for about 20 minutes. Cool them for 2-3 minutes in a large container of water. Peel them, then put them on a tea towel.
In a salad bowl, place the crumbled tuna, olives (pitted if possible), chopped chives, beefsteak tomatoes cut into quarters, green beans, a few capers and a little fleur de sel.
